Flourless Zucchini Apple Muffins

zucchini apple muffinsThese super moist paleograin & gluten free muffins are scrumptious.  My hubby gets downright giddy when he finds out that I’m making these flourless zucchini muffins.   I make these the night before so we have a quick breakfast option in the morning.  So, when my hubby returns home from his 6am Crossfit class to get ready for work; he can just grab these muffins and go.  

I have made these muffins using freshly ground almond butter or peanut butter, both versions are delicious.

Nourishing Ingredients {why I feel good feeding these muffins to my munchkin}


  • Zucchini:  Fiber, protein, B-complex vitamins, vitamins A & C, iron, phosphorus, magnesium, copper, manganese, potassium, copper, and zinc. 
  • Apple:  Vitamins A, B1, B2, B6, C, E & K, folate, niacin, potassium, phosphorus, calcium, manganese, magnesium, copper & zinc.  Full of antioxidants, fiber,  and anti-carcinogenic properties. 
  • Nut Butter:   Omega 3′s fatty acids, fiber, protein, and vitamins & minerals.  Munchkins under the age of 2 need about half of their calories to come from healthy fat, which these muffins would help supply. 
  • Raw Honey:  Contains natural vitamins, enzymes, antioxidants, as well as, antibacterial, antiviral, and antifungal properties. Local honey fights off seasonal allergies.  
  • Egg:   Contain all nine essential amino acids (protein), and they’re loaded with vitamins & nutrients that help your eyes, brain, and heart.
  • Cinnamon:  Vitamin K, iron, manganese, fiber, and calcium, as well as, has antibacterial and anti-inflammatory properties.
  • Vanilla:   Antioxidants, B-complex, calcium, magnesium, potassium & zinc.  Anti-inflammatory properties, antidepressant, and sleep aid.
  • Nutmeg:  Fiber, manganese, sleep aid, indigestion & pain relief, helps with concentration, and improves blood circulation in the body.

  1. 1 medium zucchini, peeled
  2. 1 apple, peeled & cored
  3. 1 c nut butter (almond, peanut, etc)
  4. 1/4 c raw honey
  5. 2 eggs
  6. 1/2 tsp baking powder
  7. 2 tsp cinnamon
  8. 1 Tbsp vanilla
  9. 1/4 tsp nutmeg
  10. pinch of salt
  1. Preheat oven to 350°.
  2. Shred zucchini in a food processor using shredding attachment or use a hand grater.
  3. Put shredded zucchini in a clean kitchen towel and squeeze. Super important to squeeze out as much liquid as possible.
  4. Shred apple in food processor or grater.
  5. Once apple is shredded, run the knife through it for a rough chop.
  6. Toss all ingredients in a bowl & mix thoroughly.
  7. Spoon batter into lined cupcake pan with cupcake liners.
  8. Bake for 25-30 minutes.
  1. You can make these into mini muffins by using a mini muffin pan.

  2. By “medium” zucchini, about how much shredded do you end up with? I have garden fresh and I suspect they are a bit bigger than “medium”
